Research activities

Fungi are characterised by high plasticity, growing on different substrates, producing different compounds and high industrial potential. Fermentations are long-known high-versatile processes able to produce vast array of products. Fungal fermentations are then an important tool to achieve the recycle of agro-industrial by-products into different high-value products, from feeds to expensive chemicals. “Giving value to wastes” is a key tool for Circular Economy dynamics, and are consistent with the SDG. My reseach aims to develop a working feed with high protein content, digestibility and nutritional value molecules, starting from by-products of local agro-industrial companies. Trials are held through fermentation processes with selected fungal strains or consortia. All this has to be achieved with low production costs and environmental impact. The feed produced will serve as platform, both biological and legal, for developing products for human use, such as food, supplements or medicinal compounds.
